Eve doesn’t make her appearance until Genesis 2, after creation has ended. In Genesis 1:27 and 5:2, the implication is that the female was created inside the male at the time that Adam was created. Later, God “split the Adam” and took the woman out of the man. But before that, “they” were Adam.
