There are a couple of things to note about this passage. First, when the text says “Pharisees and scribes came to Jesus” they were never doing so to learn, or to challenge themselves. When they were talking to Jesus it was to test him for His teaching threatened their very power base. So the questions they asked were never meant to be genuine questions.
Second they were not concerned for the spiritual health of the disciples in pointing out that they were not using the ritual hand washing prescribed, not by God's law, but by man's traditions added to that law. This was not a concern for dirty hands or poor hygiene it was merely a ritual washing the disciples were skipping.
So Jesus knew that they didn't care about whatever answer he gave so he let them have it. They were generating fraudulent ‘concern’ to make a political point against Jesus. So he asked them why they neglect commandments of God for the sake of tradition.
So Jesus points out the clear commandment to honor our Father and Mother and that anyone who does not do so shall be put to death. But in this particular case, the Jews had a concept whereby their obligations to honor their parents were set aside or declared korban, or dedicated to God.
This didn't mean that this money or land was actually given to the Lord to build a synagogue or temple, it was still kept within the portion of belongings owned by the individual dedicating it. It now just “identified as having belonged to God” and now could not be given to support aging parents but remained in the possession of the person making the useless dedication.
So by their very greed they were robbing their parents of future support. At the same time, they are also using their religious rituals to preserve their power and undermine Jesus's teaching.
He calls them hypocrites for being more concerned over ritual than they were for actual spiritual growth. The traditions they held to were negating the intended results of following the commandments of God. Tradition has an important role in our everyday lives, but it was never meant to circumvent the actual laws of God.
That's why adherence to tradition that cannot be confirmed to be biblical is so inherently dangerous. It's tradition that that teaches such unbiblical tenets like purgatory and confessional along with Mass are just pure anti-scriptural rituals made ‘holy’ through mass acceptance.
It's these traditions that create a false sense of security and righteousness in the completion of a set of rituals meant to give the appearance of “religion”. Jesus quotes Isaiah when he refers to the scribes and Pharisees saying that their traditions have caused their worship to be in vain. And all that remains is a hollow feeling of doing the right thing in completing a ritual that doesn't benefit you in any way.
They equate tradition with God's word and that is another reason that absolute trust in the teachings of Man, a.k.a. tradition is a danger to our very souls. It is the reason the catholic church must continue to stand on the false claim that 1. Peter was the first Pope. 2. That Peter claimed that he had the power to pass an authority he never claimed for himself down as apostolic succession falsely claims. 3. That since God's word came from the church's Authority the church has the right to change teachings long held because they feel like it.
That action or line of thinking literally negates God's commandments just as Jesus warned us against in this passage. The commandments of men will not save us and makes us rely on ourselves for salvation.
